Ambada/Ambeda Khatta ( Tangy Indian Olives Curry )

One of the most endearing and enduring memories of my childhood days have been those village feasts where everyone sat down on the floor to partake the meals. Served on disposable plates sewn out of dried Sal leaves (khali patra), even the simplest of meals acquired that 'wow' factor in my city bred conscience. Even as the piping hot rice was piled on the sal leaves, the aroma released by the heat was enough to set the salivary glands in a state of overdrive. A topping of dal and some random vegetable curry usually followed the rice.

However, all tongues were kept hanging in limbo for the arrival of the 'piece de resistance', if I may christen it so, of all odia feasts. The mutton curry was undoubtedly most sought after dish at these feasts. But any guesses what came a close second on my list? None other than the 'ambada khatta', a sweet and tangy relish made out of Indian olives. While, the coastal regions of Odisha swear by the 'Oau' or elephant apple, the 'ambada' is more prevalent in the Western parts of the state. Given that the mutton curry is quite spicy and laden with fat, the sweet sour nature of the 'khatta' acts as the perfect foil for it.

It had been ages since I got the chance to feast on some of this delicious stuff. Hence I was almost euphoric when I chanced upon a vendor selling them in Bengaluru. The young fruit is usually tender and one can easily split it into four halves. But the ones that I found were quite mature and hence I just ended up putting slits on their surface. They got nicely cooked in the gravy and lent their juices to it. However, the consistency was a little thinner than usual. One can mash them up a little to thicken the gravy. I was quite happy with the thin consistency so I just let it be.

Preparation Time - 30 mins

Ingredients -

  • 250 gm Ambada/Ambeda/Indian Olives
  • 1/2 cup sugar
  • 2 tsp mustard 
  • 1 tsp cumin
  • 1-2 dry red chili
  • 3-4 garlic cloves
  • 1/4 tsp pancha phutana
  • a sprig of curry leaves
  • 2 pinch asafoetida
  • 1/4 tsp turmeric
  • salt to taste
  • 2 tsp oil

Preparation - Dry grind the red chili, mustard and cumin seeds. Once powdered, add the garlic and a little water. Grind into a fine paste and keep aside.

If the ambada is tender, cut each one into 4 halves. Else just put 3-4 slits on the surface.

Cooking - Heat the oil in a wok. Add the pancha phutana and let it splutter.

Add curry leaves and asfoetida. Fry for 30 seconds before throwing in the ambada.

The ambada need to be cooked/stir fried till it turns brown and the skin is almost ready to peel off.

Now add 2 1/2 cups water, salt and turmeric. Let it simmer for a while to let the juices seep into the gravy.

Then add sugar and boil some more till it reaches the desired consistency. 

[Mash them up a bit if you want a thicker curry. However, it will also increase the sour quotient of the gravy and hence you have end up putting more sugar to balance it out]

Serve with rice and mutton curry.


















Note - This can be preserved in the fridge for a couple of days.

Black Rice Truffles with Coconut Custard ( The Vegan Attakali )

IMP - This is an original recipe created by the blogger and has been published for the first time on Oriyarasoi. 


At times, when I look at food, my thoughts begin to wander far and wide. How would a dish look like if it were to be prepared in a different realm or even in a different era ? That inspires me to take a very mundane everyday dish and give it a makeover. For me a makeover is all about preserving the very soul of a recipe while mutating it into something very different. And that is exactly what I have done with the 'attakali', a traditional Odia dessert. Of course, this recipe is a late Teacher's day tribute to Masterchef Vikas Khanna for it is his show 'Twist of Taste' that really inspires me to take on such mammoth challenges.

For the uninitiated, 'attakali' consists of rice balls immersed in a rice custard (more like a phirni). It is quite low in calories as compared to other desserts and is usually prepared on certain festive days. In my recipe, I have used two varieties of rice. The black or purple rice from Manipur is used to create the rice balls and the sweet smelling Gobindo bhog from Bengal is cooked in coconut milk to create a vegan custard. The nuttiness of the black rice complements the sweetness of the Gobindo bhog to build a unique flavor. This is a vegan version of the 'attakali'.

Preparation Time - 40 mins

Ingredients -

For the rice balls -


  • 1/2 cup Black (Manipur) rice 
  • 3-4 tsp jaggery
  • 2 tsp almond paste (optional)
  • a pinch of cardamom
  • toasted sesame seeds for garnishing



For the coconut custard


  • 3 tsp Gobindo bhog rice ( one can use Jeera rice instead ) 
  • 2 cups coconut milk
  • 2-3 tsp sugar 
  • 2 pinch white pepper powder
  • toasted charoli seeds

Preparation - Wash and soak the two rice varieties separately . 

Grind the purple rice into a fine paste without using too much water. Add the jaggery and grind it again. Keep aside

Grind the Gobindo bhog rice separately.

Cooking - 

For making the rice balls -

Boil about 1/4 cup water in a wok. 

Add the purple rice and jaggery paste. Cook on low to medium flame as it thickens. 

Once it starts to solidify, add the almond paste and the cardamom powder. Remove from the flame and keep aside it is bearable to touch the dough.

Rub a few drops of oil on the fingers and knead it again. Divide the dough into small portions and shape into balls by rolling between the palms. 

Sprinkle toasted sesame seeds on a plate. Roll these balls gently on the seeds.

For the coconut custard -

Bring the coconut milk and sugar to a gentle boil. Add the Gobindo bhog rice paste and keep stirring it till it thickens to a thin custard like consistency. 

Add the powdered white pepper and toasted charoli at this stage. Mix it in. Remove from the flame. Let it cool down before popping it into the fridge for 15 mins.

Serve the rice balls (at room temperature) with a dollop of the chilled coconut-rice custard.

Magaja Laddoo ( Ganesh Chaturthi Colab with A Dollop Of That & Delish Potpourri )

It's time to welcome home the 'Vighna Harta', the Hindu God endowed with the power to remove all obstacles. He is the God of new beginnings, of wisdom, success and prosperity. Hence for many of us, Ganesh Chaturthi is the right time to begin something new. However, the festivities surrounding this occasion vary with various parts of the country. In Odisha, it is just a one day affair whilst in states like Maharashtra, the celebrations last 10 days on such a grand scale that everything else almost comes to a standstill.

With just 3 days to for the festival, it is high time to get the grocery shopping done for the various kinds of Prasadam to be prepared on the day. Except for the perishables, which of course have to wait for the last day. Different regions swear by their own version of the elephant God's favorite. But 'Laddoos' are onething that remain a constant. Almost every image of Ganesha is depicted with a laddoo in his hand or a plateful of these placed right in front of him.

Hence, my special recipe for this day had to be some kind of a laddoo. And I finalized on the 'Magaja Laddoo' or'Atta laddoo', which is quite popular in Odisha. When I was a child, these laddoos were made by my grandmother who absolutely adored them. She used to dot them with roasted charoli seeds and the combination of flavors was just heavenly. These are a specialty of the cold winter months when the hilly regions of Odisha can turn quite cold. As expected, quite a bit of ghee goes into the making of these laddoos which are said to keep the body warm.

My version of these laddoos is however low in ghee. And I have further fortified their nutritional quotient by adding powdered almonds, flax seeds, sesame seeds, charoli and pumpkin seeds.

Preparation Time - 40 mins

Ingredients -


  • 2 cups whole wheat atta (flour)
  • 2 tsp sesame seeds
  • 2 tsp flax seeds
  • 2 tsp charoli 
  • 2 tsp pumpkin seeds
  • 10-12 almonds
  • 1/2 cup sugar
  • 1/2 cup ghee
  • 2-3 cloves (powdered)
  • 1 green cardamom (powdered)


Preparation - Dry roast the sesame seeds, flax seeds, charoli, pumpkin seeds and almonds separately.

Keep them aside to cool down. Transfer all these nuts into a mixer jar (chutney jar is fine) and powder them. Do not overdo the grinding as these the natural oils tend to seep out.

Cooking - Dry roast the whole wheat atta on a very low flame on a skillet. Gradually it will start turning a few shades darker and giving off a heavenly aroma.

At this stage, add the ghee, powdered nuts and sugar . Cook for a while to bring everything together.

Finally sprinkle the powdered cardamom and cloves. Mix in and remove from the flame.

Let it cool a little till it becomes bearable to touch. Take small amounts of the mixture and press tightly to bind them into laddoos. Shape them while they are still warm as they tend to be fragile and difficult to mold once cooled down.































Store in airtight containers once completely cool. Stays fresh for over two weeks.

Maccha Poda ( Kancha Maccha Besara )

One of the authentic odia recipes that has always been close to my heart is the 'Maccha Poda' which literally translates into burnt fish. It is prepared by first marinating the fish in a mustard paste, then wrapping it up in 'sala patra' or Sal leaves and finally popping it in the dying embers of a wood/charcoal fire. But as more conventional cooking appliances came up, people started putting all the ingredients together in a thick bottomed vessel and cooking it on a very low flame. While this variant tastes quite yummy, the authentic version flavored with the smokey scent of the Sal leaves just happens to be out of this world. I myself dream of making this in an OTG in case I get my hands on some Sal leaves.

I happen to have a rather emotional connection with this dish. My grandmother absolutely loved it and did brilliant job of preparing it . Infact I havn't tasted a better one . Though it is quite easy to prepare, one has to get proportion of the ingredients right and use the right quantity of spice/oil.

Preparation Time - 40 mins ( including standby time )

Ingredients -

  • 3 pieces of Rohu/Catla fish
  • 2 tsp mustard seeds
  • 7 garlic cloves
  • 1 dry red chili
  • 2 green chilis
  • 2 pinch turmeric
  • salt to taste
  • 1 1/2 tsp mustard oil
  • 1 tsp chopped coriander leaves


Preparation - Wash the fish pieces. Marinate with a pinch of salt and turmeric. Let it sit for 5 mins.

First grind the mustard seeds and dry red chili. Then add 1 green chili and 4 garlic cloves along with a little water. Grind again into a fine paste.

Add the mustard paste to the fish. Also add the slit green chili, crushed garlic cloves, salt, turmeric, 1 tsp mustard oil and about 1 cup of water. Mix and let it sit for 15-20 mins.

















Cooking - Take everything in a thick bottomed pan. And let it cook uncovered for about 15 mins till the gravy forms a thick layer around the fish. Remove from the flame.

Drizzle the mustard oil and sprinkle chopped cilantro before serving (hot). Tastes best with steaming hot rice and yellow dal !

Piaja Sagaw Bara ( Rustic Spring Onion fritters )

In most Odia homes, a pakhala meal calls for the inclusion of the 'Ulli piyaja' or sambar onions as they are commonly known. So, it hardly comes as a surprise that almost everyone with a vegetable patch would be found growing a batch of these flavorsome onions. They are a hardy lot requiring minimum care and even a small patch yields enough to last through the summer season when 'Pakhala' becomes the staple food of a scorched Odisha.

But it is not only the onions that are prized. Even the leaves are quite tasty and can add a lot of flavor to the dals or other mixed vegetable curries ( especially santula ).However, my favorite recipe with those greens happens to be the yummy fritters that they yield .

It is a rather unremarkable recipe that just calls for the use of a bit of rice paste that acts as the binding agent. But the taste is simply unparalleled. These fritters can be had with Pakhala or hot rice though you will definitely get tempted to bite into a few straight from the skillet.

Preparation Time - 15 mins

Ingredients - 

  • 2 cup chopped onion greens ( tightly packed )
  • 1 small onion ( finely chopped )
  • 1 tsp sesame seeds
  • salt to taste
  • 3 tsp oil

For the rice paste -

  • 1/4 cup raw rice
  • 2 pinch cumin seeds
  • 1 dry red chili

Preparation - Wash and soak the rice for 3-4 hours. Grind into a smooth paste along with the cumin seeds and red chili using little water.

Muddle/crush the onion greens and potatoes lightly. Transfer to a mixing bowl. Add just enough of the rice paste ( 2/3 of the given quantity is enough ) to bind the greens. Sprinkle salt and the sesame seeds. Mix everything.

Cooking - Heat a thick bottomed skillet. Drizzle oil over it. 

Take about two teaspoonfuls of the spring onion mixture for each fritter and place it on the skillet. Flatten it a bit but do not spread it too thin. Let it cook on a low flame till it turns a little brown on one side.

Flip it over. Drizzle a little more oil on top. Cook to a similar brown hue.

Remove and serve immediately with hot rice or Pakhala.

Gutti Vankaya Biryani

Gutti Vankaya or Stuffed Brinjal is a popular Andhra delicacy that one can find in most of the South Indian restaurants. It is more commonly known as Baghara Baingan in Hyderabad. More suitable for a festive menu rather than a everyday meal, it is infused with a rich medley of flavors. Peanuts (or cashews), coconut, curry leaves, sesame seeds(optional), dried chillis and tamarind along with a host of other spices give it that tantalizing and unforgettable taste.

Giving a twist to this unique taste experience, a few restaurants in the recent times have started serving it with an aromatic Andhra style biryani. And having had occasion to sample this combination, I can vouch for it's heavenly taste. While most restaurants stick to using Basmati rice for this recipe, I prefer the small grained but equally aromatic 'Jeerakasala' or 'Jeera' rice variety.

It is one of the best one-pot meal options for those potluck occasions peppered with a generous number of 'strictly vegetarian' individuals. And it is actually quite easy and takes relatively less time to put together than a dal-roti-suzbi meal. Reason enough to make it a part of your culinary arsenal.

The small purple aubergines are generally used for making this recipe. But I used the long white ones as I had a batch that needed to be consumed before the weekend. Read on for the details -

















Preparation Time - 30-40 mins

Ingredients -

For the Gutti Vankaya -

For the stuffing -

  • 2 tsp poppy seeds
  • 1/4 cup peanuts
  • 1/2 cup freshly grated coconut
  • 1 inch cinnamon
  • 1 green cardamom
  • 2-3 cloves
  • 1 bay leaf
  • 4-5 dry red chilis ( less spicy ones like byadgi )
  • 1/2 tsp coriander seeds
Others - 

  • 2 long white eggplants / 8 medium sized purple ones
  • 1 large onion ( chopped into thin long pieces )
  • 1 tsp GG paste
  • 1 sprig curry leaves
  • 1/2 tsp chili powder
  • a pinch of garam masala
  • a pinch of asafoetida
  • 2-3 pinch turmeric
  • 1/4 tsp mustard seeds
  • 1/4 tsp cumin seeds
  • a lemon sized ball of tamarind
  • salt to taste
  • oil for shallow frying

For the Biryani -

  • 2 cups Jeera ( jeerakasala ) rice 
  • 2 tbsp chopped mint leaves
  • 2 tbsp chopped coriander leaves
  • 1 small onion (finely chopped)
  • 1 green cardamom
  • 2 inch long cinnamon
  • 3-4 cloves
  • 6-7 black peppercorns
  • 2 pinch shahjeera
  • 1 bay leaf
  • 2 tsp ghee
  • salt to taste

Preparation - Soak the tamarind in 1/2 cup hot water. Squeeze the juice and discard the pulp.

Chop the white eggplants into 3 inch long pieces. Then put a 'X' shaped cut on each piece. Make sure that the cut is only till 3/4 of the length and not more. Soak the pieces in warm water to which a little turmeric has been added.

Cook the rice using the open pan method. It should be cooked yet firm to touch.

Cooking - Heat a thick bottomed pan. Add the peanuts and red chilis. Once peanuts start popping, add the cinnamon, cardamom, cloves, coriander seeds, and bay leaf. Once they gets fragrant, add poppy seeds. These start spluttering at once.


Immediately add the coconut to the same pan. Fry for 30-45 seconds and switch off.

Allow it to cool down and then grind into a coarse paste. Stuff this paste into the slits made on the aubergine pieces.

















Heat a wok. Add the oil. Throw in the curry leaves, asafoetida, mustard seeds and cumin seeds.

Once they get popping, add chopped onions. Once onion is translucent, add GG paste. Fry for 2-3 mins before adding the turmeric, chilli powder, coriander powder and garam masala. Fry for another minute.

Gently put the stuffed eggplants into the wok. Sprinkle some salt over them. Fry gently till the skin turns brown.

Add about 1 cup water and the remaining stuffing to the wok. Adjust the salt. Bring to a gentle boil and cover with a lid. Let it simmer for 5-6 mins or till the aubergine in cooked.

Add the tamarind. Simmer for 5 mins or till it reaches the desired consistency. Remove from the flame.

Heat the ghee in a wide pan. Add the onions, mint leaves and coriander leaves. Fry till the onion turns translucent. Add all the spices and fry till fragrant.

Finally add the rice along with a little salt and sprinkle a bit water. Toss gently. Cover with a lid and remove from the flame. Let it stand for 10 mins.
















Serve the Gutti Vankaya on a bed of the fragrant biryani rice.

Chattua ( Happy Janmashtami And a Tale of True Friendship )

Krishna and Sudama. Childhood friends separated over the years. The chasm in their bond thought to have widened given their disparate fortunes. But staying true to the tradition of true friendship, they did not let anything get in their way. The impoverished Sudama did not let his ego hinder him from paying a visit to his old friend who had reached the stature of a King. Nor did Krishna show any signs of an inflated self-image when he embraced the former with open arms.

No words were exchanged as to the actual purpose of Sudama's visit. And yet Krishna understood his friend's plight. The once penniless Brahmin finds himself as the owner of a palatial house on his return. Krishna did not give him occasion to lavish praise for that would have created an imbalance in their relationship. Such is the beauty of friendship. It is rightly said that we cannot choose our birth but we are free to choose our friends. So, choose wisely.

By now most of you would be wondering about the connection between this beautiful story and my recipe. Ok, let me give you a hint. One of the important components of this recipe is something that Sudama had taken as a gift when he went to visit Krishna. Bingo! It's beaten rice which is also known as pohe/avalakki/chuda in various parts of the country.

Chattua ideally refers to roasted Bengal gram flour. In large parts of Odisha, it is consumed as a porridge mixed with milk and sugar. But these days, a special kind of Chattua has overtaken the older version. A mix of roasted gram, beaten rice, cashews, milk powder, glucose biscuits and sugar goes into the making of this one. Some versions also include roasted wheat, ragi and other grains to boost the health benefits. Here is my version of 'Chattua' that I usually make in small quantities and keep in a small jar within my reach. Two to three spoonfuls is guaranteed to take care of those unwanted hunger pangs. At the same time, it can also be eaten in the regular manner with warm milk.

Preparation Time - 10 mins

Ingredients -
  • 2/3 cup beaten rice
  • 2/3 cup roasted bengal gram
  • 1/4 cup cashews ( substitute with almond and walnut to make it healthy )
  • 1 tbsp flaxseeds
  • 1 tbsp sugar ( depends on taste so I skip adding it in mine )
  • 6-7 glucose biscuits (any brand)
  • 2 tbsp milk powder (any brand)

















Preparation -  Heat a skillet. Dry roast the beaten rice till it turns crisp. Remove and keep aside till it cools down.

Add the cashews to the same skillet. Roast till they darken faintly. Remove and keep aside till cool.

Finally add the flaxseeds to the skillet. Once they start popping remove and keep aside till cool.

Take all the ingredients in a mixer jar and grind into a powder of medium consistency.

Store in a airtight container and consume within 1-2 weeks.

















To consume as a porridge, add about 1/2 cup of this powdered mixture to 1 cup of warm milk.

















Note - Chattua can be used as a substitute of Cerelac for children older than 1 year. I have also tried the same recipe with my kid. He was ok with it till he grew bored with the porridge stuff and wanted something chew-able.
